Potato Peel Broth
Ingredients
- 2 cups potato peelings or 3 large potatoes cut 1 inch on all sides, leaving only the core (discard the core)
- 4 carrots
- 8 stalks celery
- 1 handful fresh parsley
- 1 onion
- 8 cups pure water
Instructions
- Do not peel the potatoes—use the skins, as this is where the minerals are concentrated. Remove and discard the inner core.
- Place all vegetables into a pot and cover with the water.
