Do not peel the potatoes—use the skins, as this is where the minerals are concentrated. Remove and discard the inner core.
Place all vegetables into a pot and cover with the water.
Cover with a tight-fitting lid and bring to a slow simmer (do not boil).
Simmer gently for 20 minutes.
Strain and enjoy the broth.
