Potato Peel Broth

Ingredients
  

  • 2 cups potato peelings or 3 large potatoes cut 1 inch on all sides, leaving only the core (discard the core)
  • 4 carrots
  • 8 stalks celery
  • 1 handful fresh parsley
  • 1 onion
  • 8 cups pure water

Instructions
 

  • Do not peel the potatoes—use the skins, as this is where the minerals are concentrated. Remove and discard the inner core.
  • Place all vegetables into a pot and cover with the water.
  • Cover with a tight-fitting lid and bring to a slow simmer (do not boil).
  • Simmer gently for 20 minutes.
  • Strain and enjoy the broth.
  • Drink 1 - 2 cups of broth each day for 30 days.
